Lemon Coconut Bars


1 cup of almonds
1 1/2 cup dates
2 lemons
1 1/2 cup shredded coconut
1/2 teaspoon sea salt



In your food processor, process one cup of almonds until they are fine like almond meal

Finely grate the rind of the lemons and add to the almonds in the food processor

Juice the lemons and use 2 or 3 tablespoons of lemon juice depending on how lemony you want your bars to taste

Add the lemon juice, dates and salt to the food processor

Blend until the mixture is dough-like. You may need to stop the food processor several times and scrape down the sides.

Once the mixture is soft and dough-like place in mixing bowl and stir in most of the shredded coconut (leaving a little bit to sprinkle on the top of the bars) 

Place the mixture in a 9X9 pan that has been lined with baking paper

Press the mixture into the pan and place in the fridge for 1 hour
