Raw Pecan-Date Snack Bars

These bars are great to make if you need a healthy snack on-the-go.

INGREDIENTS:

One and one-third cups pitted, chopped dates

Two cups raw pecans

A few dashes of sea salt

 

DIRECTIONS:

Place chopped dates in a medium bowl and cover them completely with water. Allow to soak for 20 minutes

Process the pecans in a food processor until they resemble the texture of breadcrumbs.

When the dates are done soaking, drain the water. Add dates to the food processor and process with the nuts until well-combined and the dough comes together into a ball.

Press dough evenly into a 9” x 9” baking dish, pressing firmly with your hands to compact the mixture as much as possible. It is helpful to wet your hands with water to prevent the dough from sticking to your fingers.

Allow to set up for several hours before cutting into bars.  Wrap individual bars for a great snack bar on-the-go.

 

Note:  This recipe can be modified to use any type or combination of dried fruit or nuts you like.  You can also add chopped pieces of dark chocolate, shredded coconut and spices, such as cinnamon, nutmeg or allspice.
